St. Nicholas Cookie Pop Recipe

These cookies are as fun as making a craft! If creating these with littles, consider baking the cookie pops in advance, so you can get right to the fun part of decorating!

Oven Temp: 400 Degrees
WHAT YOU’LL NEED
Cookie sheet
Parchment paper
Mason jar or glass
30 wooden popsicle sticks *make sure food safe
Red food coloring
INGREDIENTS TO GATHER
1 cup cane sugar
1/2 cup shortening
2 tablespoon milk
1 large egg
2 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
More sugar, for dipping glass
TO DECORATE
1 1/2 cup powdered sugar
1/2 teaspoon vanilla
2-3 tablespoon water
4 tablespoon sugar (colored red)
1/2 cup shredded coconut
30 miniature marshmallows
60 mini chocholate chips
30 red hot cinnamon candies
WHAT TO DO
Preheat oven to 400 degrees.
Using a stand mixer, or a handheld beater, combine the sugar, shortening, milk and egg, beating until combined.
In a separate bowl, sift the flour, baking powder, baking soda and salt. Add dry mixture to the wet mixture.
Shape the dough into walnut-sized balls (about 1 1/4 inch).
Place a popsicle stick into each ball of dough, making sure it reaches the center so the stick will be securely in the cookie once baked. Place on cookie sheet.
Dip the bottom of a glass or mason jar in sugar and flatten each ball by gently pressing down. Bake for 8-10 minutes or until golden.
Cool completely before decorating.
DECORATING
Prepare the frosting by mixing the powdered sugar and vanilla, adding water in teaspoon increments until it gets to a spreadable consistency.
Mix a few drops of red food coloring into ½ a cup of sugar. Set aside in a bowl.
Prep the decorating items (shredded coconut; miniature marshmallows; mini chocolate chips; red hot cinnamon candies) by placing them in small bowls.
To frost the cookies...
For the hat... sprinkle red sugar along the top, adding a marshmallow (I used a candy coated almond) on the right side to make the pom-pom.
For the beard... add shredded coconut to the lower 1/3 of the cookie.
For the nose...add the cinnamon dot in the center.
For the eyes...add two mini-chocolate chips.
Admire and enjoy!
